French cookware and cuisine is often held up as the gold standard for all other countries when it comes to quality, craftsmanship, and purpose. As gourmet cuisine was developing in the age of the Renaissance and further evolving after the French Revolution, chefs became elevated from mere cooks and butchers into artisans, inventing meals and diets and creating new standards and even educational systems to teach proper techniques. Hand-made metal cookware had already become a common facet of European life since before the appearance of the Roman Empire, but the adherence to standards and recipes created a market for mass produced, higher quality utensils, pots, plates, and more. One of the most successful French makers of cookware was Ernest Mauviel, who in 1830 established a copper and cast iron factory in the Normandy village of Villedieu-les-Poêles (loosely translated as “God’s city of pans”) on the shores of the Mont Saint-Michel Bay. The small village (population 4,000) was founded in the 12th Century as the home of the Knights Hospitaller, a crusading brotherhood. Craftsmen who learned metalworking from North African artisans settled in the town, and by the 14th Century a formal collective of pan makers had been established. Villedieu became so renowned for its hammered copper craft that residents were (and still are) known as les sourdins, or “the deaf.” Mauviel’s focus on copper cookware rather than simply decorative items made them recognized throughout Europe and later the whole world, influencing a boom in copper cookware that has barely abated since. The process was so ubiquitous that, for a time, their factory wares and those of the other villagers were virtually indistinguishable, as the entire town worked to imitate and perpetuate the level of quality Mauviel introduced.
