Sand dollars (also known as “sea cookies” or “snapper biscuits” in New Zealand, “sand cakes” or “cake urchins” in Brazil, and “pansy shells” or “sea biscuits” in South Africa) are species of flat, burrowing sea urchins belonging to the order Clypeasteroida. The term “sand dollar” derives from the appearance of the tests (skeletons) of dead individuals after being washed ashore, which lack the velvet-like skin of spines and have been bleached white by sunlight. To beachcombers of the past this suggested a large silver coin, such as the old Spanish dollar, and in the folklore of several East Coast states sand dollars were believed to be coins lost by mermaids. The species has existed virtually unchanged since the early Jurassic, with the most modern variants appearing during the Eocene. The bodies of adult sand dollars, like those of other echinoids, display radial symmetry, with flower petal-like patterns consisting of five paired rows of pores. The pores are perforations in the endoskeleton through which podia for gas exchange project from the body. Unlike other urchins, the bodies of sand dollars also display secondary front-to-back bilateral symmetry with no morphological distinguishing features between males and females, which may have also contributed to the notion that they were “coin-like.” Sand dollars can be found in temperate and tropical zones along all continents, living in waters below the mean low tide line, on or just beneath the surface of sandy and muddy areas. Sand dollars usually eat algae and organic matter found along the ocean floor, though some species will tip on their side to catch organic matter floating in ocean currents. In 2008 it was discovered that, although there are female and male versions of the species, they all possess the ability to clone themselves asexually, which has made them extremely resilient in the face of relentless global warming and climate change damaging or destroying their natural habitats. Billions of specimens can be found all over the world, in some place used frequently in the creation of art or sold individually as souvenirs of a visit to the seashore, particularly those of immense size and quality.
