Stemware is drinkware where the bowl stands on a stem above a foot, the base that allows the drinker to put the vessel down onto a table. It is usually made from glass, but may be made from ceramics, metals, or acrylics in the modern era. Stemware is traditionally intended for cool or room-temperature beverages, like water or wine. The stem allows the drinker to hold the glass without affecting the temperature of the drink, but since glass conducts heat well this makes it unsuitable for warm beverages. The snifters represent a unique exception, as they are designed to hold the bowl in a cup of the hand to warm up the beverage. Glass stemware, with either flat or domed feet, first appeared in the Middle Ages. Prior to that, a typical drinking vessel made of glass was either a tumbler (unlike the modern ones, these have rounded bases and could literally tumble) or a pointed-base design intended for insertion into the ground or streambed for cooling. The early designs of the foot used thick rims manufactured by folding edges of the foot over itself. This prevented cracking, but increased the weight of the glass, so in England, simple flat bases appeared once the excise tax, based on the vessel weight, was introduced in 1745. Modern stemware primarily uses three types of bowls: bucket-shaped, with a flat bottom and near-vertical sides; tulip-shaped, where the walls have an S-shaped section, starting from the round bottom and curving inward and then outward; and flared, with a long vertical form and either a pointed or round bottom, sometimes with an optional flare-out at the top. Larger stemware is usually used for nonalcoholic beverages, medium-sized bowls are used for wine, and small ones are for high-alcohol-content drinks like aperitifs and dessert wines. There are even very small pieces of stemware made specifically for the drinking of cordials and liquors (except, of course, for the aforementioned snifter). The reason for this is that the shape and size of the bowl affects the taste of the beverage. This is why the whisky glass known as the “Glencairn” is so prized, because it was developed through hundreds of years of research into finding the perfect shape to appreciate all the key aspects of the beverage: sight, taste, and smell.
